Dessert Recipe Mini triple choc cupcakes

Ingredients:

  • 1/2 quantity Basic cupcakes, using only 2 eggs (see related recipe)

  • 1/3 cup white choc bits

  • white chocolate flakes, to decorate


Chocolate ganache

  • 100g dark chocolate, chopped

  • 2 tablespoons pure cream


Instructions:

  1. Preheat oven to 180°C/160°C fan-forced oven. Line two 12-hole, 1 tablespoon-capacity mini muffin pans with paper cases. Make Basic cupcakes (see related recipe), stirring in choc bits with flour.

  2. Make chocolate ganache: Place chocolate and cream in a heatproof, microwave-safe bowl. Cook on high (100%) for 2 to 3 minutes or until smooth and combined, stirring every 30 seconds with a metal spoon. Stand at room temperature for 5 minutes or until mixture is a spreadable consistency.

  3. Spread ganache over each cake. Top with chocolate flakes. Serve.
