Dinner Recipe Veal tortellini soup

Ingredients:

  • 4 cups (1 litre) beef stock

  • 700ml tomato passata

  • 1/2 teaspoon sugar

  • salt and cracked black pepper

  • 375g veal or beef tortellini

  • shredded basil, to serve


Instructions:

  1. Place the stock, tomato passata, sugar, salt and pepper in a large saucepan over medium heat and bring to a high simmer.

  2. Add the tortellini and cook following packet instructions or until al dente.

  3. To serve, spoon the tortellini among serving bowls and pour over the soup. Sprinkle with basil and serve immediately.
